Recipe // Very Veggie Curry

I think I’ve spoken on here once or twice before (a thousand) about how much I love Indian food and curries in particular. Whether it’s homemade or a takeaway, oh and we live near the best Indian in the UK, fact, I bloody love a curry.

So as soon as I heard National Curry Week was on the horizon I knew it was time to get creative. Oh and also curries are the best recipes to make when you’re using up the contents of your fridge. And that, my friends, is how the Very Veggie Curry came to fruition!

I’m a lover of adding spices to my food so this recipe was just a case of chucking loads of veggies into a pan, adding a few different spices along with half a tin of coconut milk to thicken the sauce and make it nice and creamy.
So, what was I using up in my fridge? 

  • x2 courgettes
  • 1 red onion
  • 1 white onion
  • 2 sweet potatoes chopped up and cubed
  • Half a bag of spinach
  • 1 leek

All of the ingredients, bar the sweet potato were washed, chopped and thrown into my large frying pan along with a dollop of coconut oil.

I cubed the sweet potato and pinged it in the microwave for 3 minutes to soften before adding to my curry sauce. And then it was time for the fun part – adding flavour!

Into my pan went garlic granules, chilli powder, turmeric and balti curry powder. Alongside the flavourings I added a smidge of tomato puree and half a tin of coconut oil to thicken and make all nice and saucy.

Once I’d prepped my recipe, there was just one thing missing from this meal – alcohol! You can’t have a curry without having a drink to accompany! We were in luck as the week before I’d been sent a bottle of Provence Rose wine, designed to work perfectly with curry!

It was slightly drier than we’re used to, leaving a bitter taste in the mouth. I think Rose is the kind of wine you drink in the summer or you buy a cheap bottle for a weekend, so when presented with a quality bottle, it does taste different to the supermarket brands we’re used to.

However all in all, it was a delicious meal and for such an easy, quick dinner, we really enjoyed this curry!
